Easy Portfolio Diet Recipe: Pesto Couscous with Edamame (and the Airbnb Without a Stove)

If you've ever been told to lower your LDL cholesterol, you've probably discovered there's no shortage of advice.
Eat more fiber.
Eat more beans.
Eat more soy.
Eat more nuts.
Eat less saturated fat.
What many people don't realize is that these aren't random recommendations. They're the core building blocks of the portfolio diet, an evidence-based eating pattern that combines several cholesterol-lowering foods into one practical approach.
Clinical studies have found that, when followed consistently, the portfolio diet can lower LDL ("bad") cholesterol by up to about 30%, which is an effect that can approach the benefit of a low-dose statin for some people.
The problem is that most resources stop there. They tell you what to eat, but not what to make for dinner on a Tuesday night.
As a psychologist married to a family physician, the two of us have spent a lot of time talking about this gap. The science is compelling, but after reading the research ourselves, we still found ourselves wondering, "Okay . . . but what do we actually eat?"
That's what led us to start writing a cookbook. We're creating easy portfolio diet recipes that are simple enough that we'd actually choose them over takeout—and good enough that they never feel like a compromise. No gourmet techniques, no specialty grocery stores, just realistic meals built around the foods that have been shown to help lower LDL cholesterol.
Of course, real life has a way of testing even the best intentions.
Our first challenge came sooner than expected.
Like discovering our Airbnb didn't appear to have a stove.
Um . . . Eric, Where’s the Stove?
I looked around the Airbnb kitchen again.
Nothing.
I opened a cupboard. I’m not sure why. I didn’t actually think there was going to be a stove hiding in there.
Except . . . there was.
Apparently this rental house came with a portable cooktop that lives in the cupboard.
Problem solved?
Not quite.
It wasn’t an induction burner (which would have been fast). It was a regular old conventional hot plate.
I set a pot on the larger burner.
It rocked back and forth because the cooktop wasn’t quite flat, so the pot barely made contact. The other burner was about the size of a coffee mug.
This was going to be interesting.
Our goal on this trip was to keep following the portfolio diet without turning every evening into a cooking project. Dinner had to work on one questionable burner using ingredients from a very small grocery store.
Earlier that afternoon, we’d managed to find exactly three ingredients:
One package pearl couscous
Two bags frozen shelled edamame
One container refrigerated pesto
Fifteen minutes later, we had a surprisingly generous, delicious dinner.
Even better, tomorrow’s lunch was already made because the leftovers are fantastic cold.
One of the biggest surprises we’ve discovered while developing this portfolio diet cookbook is that eating to lower LDL cholesterol doesn’t require elaborate recipes. It also doesn't require perfection. Sometimes it simply requires having one ridiculously easy meal in your back pocket for nights exactly like this.
Why Edamame Helps Lower LDL Cholesterol
One of the key components of the portfolio diet is soy protein.
Edamame is simply young soybeans, making it one of the easiest (and tastiest) ways to include more soy in your meals. Research has shown that incorporating soy protein as part of an overall portfolio diet can help lower LDL cholesterol while also adding protein and fiber that help make meals more satisfying.
In other words, it’s doing a lot more than adding a little green color to your dinner.
Easy Portfolio Diet Recipe: Pesto Couscous with Edamame
Ingredients
1 (16-ounce) package pearl couscous
2 (10-ounce) packages shelled edamame (fresh or frozen; if frozen, simply rinse under cold water to thaw)
1 (7-ounce) container refrigerated pesto
Optional:
Chopped walnuts
Directions
Cook the pearl couscous according to the package directions.
Stir in the edamame until warmed through, then mix in the pesto.
Sprinkle chopped walnuts on top if you have them.
That’s it.
Dinner in about 15 minutes.

One of the reasons we decided to share this project publicly is that there still isn’t a portfolio diet cookbook we’d actually use ourselves.
Many heart-healthy recipes are either too complicated for busy weeknights or rely on ingredients most people don’t keep around. We’re trying to change that—one recipe at a time.
